FOODIE TIME

Both me and the H are foodies – we love trying out new types of food and spend a lot of time making our food from scratch… But at the same time we are not always the most organized people – and end up with a lot of dinners with meat as the main focus point. So we have decided to start planning our food making week by week – to see if it can cut down on food expenses and also make us focus more of our food around vegetables and fruit. Since it is a sea of great food inspiration out there we have sat down and created a list of food for this week… Went on a crazy food shopping spree today – getting all the basics and the not so basics for this week.

This week we’ve used 101 Cookbooks, Smitten Kitchen and Sprouted Kitchen for inspiration…

This is the list this far:

Monday

Breakfast:

Super-eggy scrambled eggs with homemade pesto – recipe here. Made this today – remixed the pesto a bit – and it was insanely tasty!

Tuesday

Breakfast:

Egg salad sandwich – recipe here.

Lemon salad + salmon – recipe here.

Wednesday

Breakfast:

Herb cream cheese scrambled eggs – recipe here.

Dinner:

Mediterranean quinoa bowl – recipe here.

Thursday

Breakfast:

Egg salad sandwich.

Dinner:

Lasagna Bolognese – our own mix-up.

Friday

Breakfast:

Breakfast panini – recipe here.

Dinner:

Rice noodles + peanut and lime chicken – recipe here. (We might just do it warm)

Saturday

Breakfast:

Whole wheat pancakes with yoghurt and berries – our own mix-up.

Dinner:

Italian pizza – our own mix-up.

Sunday

Breakfast:

Something from earlier in the week…

Glazed beet + carrot salad – recipe here.

Then in between we will have leftovers and whatever we have around the house as lunch and snacks…

I’ll post some images as the week goes by – if the results are what we hope them to be!
